RECIPE: 5 Minute Gourmet Gnocchi

Wondering what to cook for dinner tonight? Well, wonder no further and make this delicious gourmet gnocchi. 

It's delicious, healthy and FODMAP friendly. It costs ~$12 (for 2-3 people), takes 5 minutes and you only need one saucepan.

Ingredients

  • 1 packet of pumpkin gnocchi
  • 150g baby spinach (feel free to add more, we all know what happens when you cook spinach)

Instructions

  1. Cook the entire packet of gnocchi in salted water for 1-2 minutes (until soft). Drain and rinse in cold water
  2. Put saucepan back over low heat, stir in spinach, parmesan, lemon juice and drizzle garlic infused olive oil
  3. Serve immediately with cracked pepper
