Most cakes either contain wheat or lactose (high FODMAP), and simply just have way too much fat (butter) or sugar. Don’t get us wrong, there’s a time and place for everything (including cake), we’ve just made a recipe - just like the one nana used to make - only low FODMAP (with a little less sugar). And the best part? You can’t even tell. It’s so yummy!!

Ingredients
Cake
Wet:
- 4 tbsp olive oil spread
- 3 whole eggs
- 1 egg white
- ⅓ cup vanilla lactose free yogurt
- ¾ cup lactose free milk
- ¼ cup rice malt syrup
- 1 tsp vanilla extract
Dry:
- ½ cup caster sugar
- 2 + ½ cups Lo-Fo flour
- 1 tbsp baking powder
Icing
- 1 cup icing sugar
- ¼ cup cocoa powder
- 4 tbsp olive oil spread
- ¼ cup lactose free milk
Instructions
- Preheat the oven to 180 degrees celsius and grease two round baking trays. Set aside.
- In a large mixing bowl, add all wet ingredients and beat until well-combined.
- In a separate bowl, sift all dry ingredients together.
- Slowly add all of the dry ingredients into the wet mixture and stir until well-combined.
- Divide the mixture evenly between the two trays and bake for approximately 20 minutes or until golden. Allow to cool.
- To prepare the icing, add all icing ingredients to a large bowl and beat until smooth.
- Place one cake onto a serving plate and top with approximately ⅓ of the icing mixture. Place the other cake on top and top with the remaining icing.
- Additional: top with your favourite toppings, we used sprinkles (because what says happy birthday more than that) but would also be super yummy with some shaved chocolate, nuts, strawberries or even a chopped Fodbods bar!
