Finally, A Delicious Low FODMAP Birthday Cake!!

Most cakes either contain wheat or lactose (high FODMAP), and simply just have way too much fat (butter) or sugar. Don’t get us wrong, there’s a time and place for everything (including cake), we’ve just made a recipe - just like the one nana used to make - only low FODMAP (with a little less sugar). And the best part? You can’t even tell. It’s so yummy!!

If you give this recipe a go, remember to tag us on Instagram @fodbods so we can see all your yummy recreations :)

Ingredients

Cake

Wet:

  • 4 tbsp olive oil spread
  • 3 whole eggs
  • 1 egg white
  • ⅓ cup vanilla lactose free yogurt
  • ¾ cup lactose free milk
  • ¼ cup rice malt syrup
  • 1 tsp vanilla extract

Dry:

  • ½ cup caster sugar
  • 2 + ½ cups Lo-Fo flour
  • 1 tbsp baking powder

Icing

  • 1 cup icing sugar
  • ¼ cup cocoa powder
  • 4 tbsp olive oil spread
  • ¼ cup lactose free milk

Instructions

  1. Preheat the oven to 180 degrees celsius and grease two round baking trays. Set aside.
  2. In a large mixing bowl, add all wet ingredients and beat until well-combined.
  3. In a separate bowl, sift all dry ingredients together.
  4. Slowly add all of the dry ingredients into the wet mixture and stir until well-combined.
  5. Divide the mixture evenly between the two trays and bake for approximately 20 minutes or until golden. Allow to cool.
  6. To prepare the icing, add all icing ingredients to a large bowl and beat until smooth.
  7. Place one cake onto a serving plate and top with approximately ⅓ of the icing mixture. Place the other cake on top and top with the remaining icing.
  8. Additional: top with your favourite toppings, we used sprinkles (because what says happy birthday more than that) but would also be super yummy with some shaved chocolate, nuts, strawberries or even a chopped Fodbods bar!
