Vanilla Oat Clusters

Oat clusters are such a great, healthy snack to nibble on throughout the day. Most store-bought versions are high in FODMAPs so we thought we'd share our yummy gut-friendly version. 

These yummy ones were made by a qualified nutritionist, Thimpika. 

Ingredients

  • 1.5 cups rolled oats
  • 1/2 cup of low FODMAP nuts (walnuts, brazil nuts, peanuts)
  • 3 tsp buckwheat kernels
  • 2 tsp chia seeds
  • 1/4 tsp salt
  • 3 tbsp extra virgin olive oil
  • 3 tbsp dried cranberries
  • 1 tbsp malt extract
  • 1 tbsp brown sugar
  • 2 tsp vanilla extract

Instructions

  1. Heat oven to 160°C
  2. Mix together all ingredients in a large bowl
  3. Mould mixture into clusters and spread evenly on a baking tray
  4. Bake for 20-25 minutes then allow to cool :)
