Hosting this holiday season? Or maybe you’ve been invited to a friends’ and aren’t sure what to bring? We’ve got you – below are some easy Low Fodmap canapés that are sure to impress. Each recipe serves 4 as is, but feel free to adjust according to your needs!
Red & Green Skewers
Cherry tomatoes and bocconcini are firm friends, and a tiny drizzle of lemon zest olive oil turns them into something lively and bright.
Ingredients:
- 12 cherry tomatoes
- 12 mini bocconcini
- 12 small basil leaves, fresh
- 1 tbsp extra virgin olive oil
- 1 tsp finely grated lemon zest
- Salt and pepper, to season
Method:
Thread tomato, bocconcini and basil onto toothpicks. Stir olive oil with lemon zest, season, then drizzle over skewers.
Ginger Spice Bark
A bright, crunchy bark with our sweet Ginger Nibbles, dark chocolate and gut friendly mix- ins that feels festive without being heavy.
Ingredients:
- 120g dark chocolate, chopped
- 1 tbsp coconut oil
- 1 cup Ginger Nibbles, roughly blitzed
- 30g pumpkin seeds
- 20g dried cranberries
Method:
Line a small tin with baking paper, then melt the chocolate and coconut oil in a bowl over bowling water. Once melted, drizzle into the tin and sprinkle blitzed Ginger Nibbles, cranberries & pumpkin seeds. Chill for an hour until set, then break into sections and serve.
Polenta Bites
Crispy polenta squares crowned with roasted capsicum and a crumble of feta. Festive reds and golds always look fancy!
Ingredients:
- 1 cup cooked, cooled polenta
- 1 small roasted red capsicum, sliced
- 50g feta, crumbled
- 3 cups chicken stock
- Olive oil, for frying
- Chives, diced to garnish
Method:
Cook polenta in chicken stock. Spread cooked polenta into a lined square tin about 2cm thick, then leave to set, refrigerated, for about 1 hour. Cut polenta into bite sized squares and pan fry until crisp but still holding together. Top with capsicum, feta and chopped chives!
TIPS:
For these you want a firmer polenta, so a lower liquid ratio is the goal. This gives a thick, spoon-standing texture that sets beautifully in the tray and cuts cleanly into squares. If someone pokes it in the pan and it doesn’t slump like a shy pudding, they’re on the right track!
