Gut Loving Lemon Pancakes

These pancakes aren’t just yummy, they’re also great for your gut! Top with your favourite mixed berries and coconut yoghurt. This recipe serves 4. 

Ingredients:

  • 100g almond meal
  • 1 TBSP ground flaxseeds
  • ½ TSP Salt
  • 4 eggs, lightly beaten
  • Grated zest of 1 lemon
  • 1 TSP vanilla extract
  • 125mL milk (regular or plant based)
  • 1 TBSP coconut oil or butter
  • Topping options: mixed berries, vanilla yoghurt, banana, maple syrup

Method:

  1. Place the almond meal, salt, eggs, lemon zest and vanilla in a medium bowl and whisk to combine.
  2. Gradually pour in the milk, whisking until smooth.
  3. Heat oil/butter in a frying pan until melted
  4. Scoop or pour the batter into the pan to form pancakes.
  5. Cook the pancakes for about 1-2 mins until small bubbles appear on the surface and the undersides are nicely browned. Flip the pancakes over and cook until the second sides are nicely browned (another minute or so).
  6. Serve with your desired toppings
