Lemon & Coconut Overnight Weetbix

This mouth-watering recipe, inspired by our yummy Lemon & Coconut protein bars, was brought to you by one of our wonderful ambassadors @adrianatrikolas.

It’s super easy to make and is perfect to meal prep! 

 

Ingredients

  • Gluten-free Weetbix
  • Boiling water (or almond milk)
  • Lemon rind & desiccated coconut (to taste)
  • Vanilla-flavoured coconut yoghurt

 

Instructions

  1. Crumble Weetbix in a container of choice.
  2. Pour in boiling water (or milk), enough to coat but not drown the Weetbix.
  3. Stir in half of the lemon rind and coconut and press firmly.
  4. Add yoghurt to a bowl and mix through the remaining lemon rind and coconut.
  5. Pour on top of the base mixture then set overnight in the fridge.
