Banana Peanut Choc Chip Slice

In honour of our delicious new Banana Peanut Butter Bars, I made a Banana Peanut Choc Chip Slice. I think this is actually one of the most amazing things I've ever made – I think you'll love them too!

It only takes about 10 minutes, followed by 25 minutes of baking. It's low FODMAP, gluten free and pretty healthy for a slice.

The texture is to die for – moist and a little bit chewy. I like to eat it straight from the oven, or microwaved for 20 seconds to melt the choc chips.

Ingredients: 

  • 1 1/2 cup gluten free flour
  • 1 tsp baking powder
  • 1/2 cup brown sugar
  • Pinch of salt
  • 2 semi ripe bananas, mashed
  • 3 tbsp peanut butter (we used Mayvers crunchy)
  • 1 Egg
  • 1 tbsp vanilla extract
  • 1/2 cup unsweetened almond milk (Tip: try to find one with at least 2% almonds. I like So Good which has 2.5%)
  • 100g dark chocolate chips

Instructions:

  1. Line a small-ish baking tray with baking paper and pre-heat oven to 180 °C
  2. Mix the flour, sugar, baking powder and salt in a large mixing bowl
  3. In a separate bowl, mix the egg, vanilla extract and bananas and peanut butter then stir into dry mix
  4. Gradually stir in the almond milk then the choc chips
  5. Bake for 25 minutes then let cool for a bit before cutting and serving
