This quesadilla is healthy, super easy to make and low FODMAP (by ingredient). Perfect way to start the day!
Ingredients
- 2 eggs
- Your favourite low FODMAP wrap (we love Simson's Pantry - their Better For You range is certified FODMAP friendly)
- 1/4 cup grated mozzarella
- 1/4 cup spinach
- 1/2 small tomato, sliced
- 1/8 avocado, smashed
Instructions
- Whisk the egg with a pinch of salt and pepper then scramble over medium heat until cooked.
- Lay the wrap out on a board then place the cheese over half, topping with spinach, tomato and cooked egg.
- Add the avocado to the other half of the wrap then fold in half to close.
- Place the quesadilla back onto the pan (cheese side down, avo side up) and ENJOY!
