3 Gut Loving Salads

The best way to eat healthily is to plan ahead! Make meal prep your new years resolution and treat yourself to a wholesome salad every day. Here are three of our favourites! These are just some recipe ideas but these salads are very versatile and can be made however you like –ie. feel free to add / subtract ingredients.

Wholesome Pumpkin Salad

  • Baby spinach
  • Kale, chopped
  • Avocado, cubed
  • Roasted kent pumpkin, cut into cubes
  • Crumbed feta (plant based, if required)
  • Pine nuts

Dressing:

  • Drizzle garlic infused oil
  • Lemon juice
  • Salt + Pepper to taste

Buzzing Beetroot Salad

  • Green cabbage, finely sliced
  • Rocket
  • Canned sliced beetroot
  • Sunflower seeds
  • Blueberries
  • Avocado
  • Goats cheese

Dressing:

  • Lemon juice
  • Olive oil
  • Maple syrup (optional, for a touch of sweetness)
  • Salt + Pepper

Green Goddess Salad

  • Baby spinach
  • Lebanese cucumber, finely sliced
  • Edamame, shelled and cooked
  • Radishes
  • Crumbed feta (plant based, if required)
  • Toasted almonds, roughly sliced
  • Alfalfa

Dressing (to blitz in a blender):

  • Greek yoghurt
  • Fresh herbs (mint, chives, parsley)
  • Lemon juice & zest
  • Garlic infused olive oil
  • Capers
  • Salt & Pepper
