Salty slabs of halloumi sit on a throne of avocado and fresh rocket. All of these bright elements are brought together with the finishing kick of spicy maple syrup. This results in an upgraded avocado toast you’ll crave day after day!
Ingredients:
- 1 packet of halloumi, sliced (but not too thin!)
- 2 slices sourdough bread
- 1 ripe avocado, pitted
- 1/2 cup, or about a handful, of rocket, washed and dried
- 1 small red capsicum, diced finely
- Salt, to taste
- Squeeze of lemon
- Drizzle of olive oil
- 1 TBSP Maple Syrup
Method:
- Grease a skillet with a drizzle of olive oil and place it over medium heat. Add the slices of halloumi and cook for 2-4 minutes. The halloumi will release some liquid.
- Once the cheese is golden, flip and cook for 1-2 minutes more. The second side will cook much faster! Transfer cooked halloumi slices to a clean plate.
- While the halloumi is frying, toast the two slices of sourdough to your liking.
As the bread toasts, smash the avocado in a small bowl with salt, red pepper and a squeeze of lemon juice. It’s good to note that the halloumi is salty, so a pinch in the avocado will do! - When the toast is ready, smear the avocado on the slices. Spread the arugula over the avocado and divide the halloumi over the toast. (Depending on how you sliced the halloumi, you may have extra slices. Enjoy them as a snack with fresh fruit or put them on a salad!)
- Drizzle spicy maple syrup over the halloumi and enjoy!
