Quick, easy, one pan and macro balanced - perfect comfort food for the whole family!
Ingredients:
- 1 large sweet potato, cubed
- 2x salmon portions, no skin
- 1x small head of broccoli, sliced into florets
- 200g finely grated tasty cheese
- Lots of olive oil and salt to taste
- ½ a lemon to serve
Method:
- Cut the sweet potato into cubed chunks, cover in olive oil and salt. Roast for ~15 mins at 180 °C in an airfryer tray or oven proof dish.
- Slice the broccoli into small florets and cover in olive oil.
- Add the salmon and broccoli to the sweet potato. Cook for a further 10 minutes.
- Remove from oven / air fryer. Add the grated cheese and mash with a fork or potato masher to a consistency you prefer.
- Optional: serve with a squeeze of lemon
