Cheesy Sweet Potato Salmon Smash

Quick, easy, one pan and macro balanced - perfect comfort food for the whole family!

Ingredients:

  • 1 large sweet potato, cubed
  • 2x salmon portions, no skin
  • 1x small head of broccoli, sliced into florets
  • 200g finely grated tasty cheese
  • Lots of olive oil and salt to taste
  • ½ a lemon to serve

Method:

  1. Cut the sweet potato into cubed chunks, cover in olive oil and salt. Roast for ~15 mins at 180 °C in an airfryer tray or oven proof dish.
  2. Slice the broccoli into small florets and cover in olive oil.
  3. Add the salmon and broccoli to the sweet potato. Cook for a further 10 minutes.
  4. Remove from oven / air fryer. Add the grated cheese and mash with a fork or potato masher to a consistency you prefer.
  5. Optional: serve with a squeeze of lemon
