The perfect dip for lazy movie nights, leftover corn chips, or when you’re hosting peckish friends!
Ingredients (serves 4):
- 200g frozen edamame, thawed
- 1 avocado
- 1 bunch coriander, chopped finely
- 1 spring onion, thinly sliced
- Juice 2x limes
- Salt, generous amount
- Splash of Garlic infused oil
- ½ Chilli, finely chopped (optional)
Method:
- Blitz the edamame in a food processor
- Add the avocado and blitz until creamy
- Place all remaining ingredients into a blender and pulse for 60 seconds or until well mixed
- Spoon into a ramakin or small bowl and enjoy with your favourite corn chips!
