Edamame Guacamole

The perfect dip for lazy movie nights, leftover corn chips, or when you’re hosting peckish friends!

Ingredients (serves 4):

  • 200g frozen edamame, thawed
  • 1 avocado
  • 1 bunch coriander, chopped finely
  • 1 spring onion, thinly sliced
  • Juice 2x limes
  • Salt, generous amount
  • Splash of Garlic infused oil
  • ½ Chilli, finely chopped (optional)

Method:

  • Blitz the edamame in a food processor
  • Add the avocado and blitz until creamy
  • Place all remaining ingredients into a blender and pulse for 60 seconds or until well mixed
  • Spoon into a ramakin or small bowl and enjoy with your favourite corn chips!

✨ This keeps well in the fridge for up to 2 days!
