This mouth-watering recipe, inspired by our yummy Lemon & Coconut protein bars, was brought to you by one of our wonderful ambassadors @adrianatrikolas.
It’s super easy to make and is perfect to meal prep!
Ingredients
- Gluten-free Weetbix
- Boiling water (or almond milk)
- Lemon rind & desiccated coconut (to taste)
- Vanilla-flavoured coconut yoghurt
Instructions
- Crumble Weetbix in a container of choice.
- Pour in boiling water (or milk), enough to coat but not drown the Weetbix.
- Stir in half of the lemon rind and coconut and press firmly.
- Add yoghurt to a bowl and mix through the remaining lemon rind and coconut.
- Pour on top of the base mixture then set overnight in the fridge.
