We know how hard it is to find FODMAP friendly dips – they almost always contain garlic, onion, cashews and other gut wrenching ingredients (for those of us who are intolerant).
This delicious dip recipe will literally take you 5 minutes to whip up, clean up is minimal and your friends will be wow'ed! All you need is a food processor or blender.
It's healthy, FODMAP friendly and can be made vegan. For low FODMAP servings, aim to stay under 40g.
Ingredients:
- 1 handful of walnuts
- 450g can of beetroot, drained (whole, sliced or diced – all ok!)
- Juice of 1 medium lemon
- 1 bunch of mint leaves, roughly sliced
- 200g of soft Feta, cut into cubes (option to use vegan)
- Salt & Pepper
Instructions
In the food processor, blitz the ingredients one by one in the following order: walnuts -> beetroot -> lemon juice -> mint leaves -> Feta -> Salt and pepper
You can add more mint or walnuts, if it's a little bit runny.
Store in the fridge and serve with crackers, carrot sticks... whatever you fee like!
