Healthy Banana Mug Cake

Whip up this healthy banana mug cake in minutes using ingredients you likely already have at home! Simply mix everything in a coffee mug for a quick, single-serving treat—no oven needed! 

Ingredients:

  • 3 TBSP gluten free flour
  • 1 TBSP chopped walnuts
  • ¼ TSP baking powder
  • 1 Pinch sea salt
  • 1 ½ TBSP unsweetened vanilla almond milk
  • 1 TBSP mashed banana (avoid overly ripe ones as they’re high in FODMAPs)
  • 1 TBSP pure maple syrup
  • 1 TSP chocolate chips, plus more for topping (optional)
  • 2 TBSP powdered sugar

Method:

  1. In a small microwave safe coffee mug, add the flour, walnuts, baking powder, and salt, stirring to combine.
  2. Add the almond milk, mashed banana, and maple syrup and stir again until combined.
  3. Sprinkle with additional chocolate chips if desired.
  4. Microwave 50 seconds or until it has risen and fully cooked.
